  • 1 cup pear nectar (or fresh pear puree)
  • 1/2 cup orange juice (fresh-squeezed if possible)
  • 2 tablespoons maple syrup or honey (to taste)
  • Sliced apples, pears, and citrus (for garnish and flavor)
  • Fresh rosemary or thyme sprigs
  • Cinnamon sticks
  • Whole cloves (optional, 2-3 per batch)
  • Star anise (optional, for garnish)
  • Fresh ginger, sliced or grated (optional)
  • Lemon and lime slices (for garnish)
  • Ginger beer or ginger ale (for topping, about 1/4 cup per serving)
  • Sparkling water or club soda (for topping, about 1/4 cup per serving)
  • Pomegranate arils, apple chips, frozen cranberries (optional, for garnish)
  • Cinnamon sugar (for rimming glasses, optional)
  • Fresh herbs: rosemary, thyme, or mint (for garnish)

Instructions

  1. Wash and slice all fruit (apples, pears, citrus). Peel and slice fresh ginger if using. Gather all spices and sweeteners.
  2. Optional: Make a spiced syrup by simmering 1/2 cup water, 1/2 cup sugar or honey, 2 cinnamon sticks, 3 whole cloves, and a few slices of ginger in a small saucepan. Stir until sugar dissolves, steep 5 minutes, strain, and cool.
  3. In a pitcher, combine 2 cups apple cider, 1 cup cranberry juice, 1 cup pear nectar, and 1/2 cup orange juice. Add 2 tablespoons maple syrup or spiced syrup, adjusting to taste.
  4. Add sliced fruit, a few fresh rosemary or thyme sprigs, and citrus rounds. Add a cinnamon stick or star anise for extra flavor.
  5. For a warm mocktail, pour into mugs and gently heat on the stove for 10 minutes (do not boil). For a cold version, chill the pitcher in the fridge for at least 30 minutes or serve over ice.
  6. Just before serving, top each glass with about 1/4 cup ginger beer or sparkling water for fizz.
  7. Optional: Rim glasses with cinnamon sugar. Garnish with more fresh herbs, a cinnamon stick, or pomegranate seeds. Serve immediately.

Taste and adjust sweetness before serving. Add carbonated elements just before serving to keep drinks fizzy. For a warm version, heat gentlyโ€”do not boil.
