  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/3 cup pumpkin puree
  • 1 teaspoon pumpkin spice blend
  • 1/2 teaspoon vanilla extract
  • 1/3 cup marshmallow fluff
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine 1 cup of water, 1/2 cup brown sugar, and 1/2 cup granulated sugar. Heat over medium heat, whisking occasionally, until the sugars dissolve completely (about 3-4 minutes).
  2. Add 1/3 cup pumpkin puree and 1 teaspoon pumpkin spice blend. Whisk until smooth and bring to a gentle simmer. Let it bubble for 5 minutes, stirring occasionally.
  3. Reduce the heat to low and stir in 1/2 teaspoon vanilla extract and a pinch of salt. Cook for another 2 minutes.
  4. Remove the saucepan from the heat and immediately whisk in 1/3 cup marshmallow fluff. The mixture will become creamy and slightly thicker.
  5. Optional: Strain the syrup through a fine mesh strainer into a heat-resistant glass jar for a smoother texture.
  6. Let the syrup cool completely before sealing the jar. Store in the fridge for up to 2 weeks.

Notes

If the syrup thickens too much while cooling, simply warm it up with a splash of water and stir until it reaches your desired consistency. Adjust sweetness or spice levels to match your taste preferences.
