Flavorful Avocado Tomato Croissant Sandwich

A quick and easy sandwich featuring creamy mashed avocado, juicy tomato slices, and fresh greens on a flaky toasted croissant with a hint of Dijon mustard for a subtle zing.

Ingredients

  • 2 large croissants, preferably fresh or day-old
  • 1 ripe avocado, mashed with some chunks
  • 1 medium ripe tomato, sliced about 1/4 inch thick
  • A handful of baby spinach or arugula (optional)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon freshly squeezed lemon juice
  • Salt and freshly ground black pepper to taste
  • Butter or olive oil for toasting croissants

Instructions

  1. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash gently with a fork, leaving small chunks. Stir in lemon juice, a pinch of salt, and black pepper.
  2. Slice the tomato into 1/4 inch thick slices. Lay them on a paper towel for a minute to soak up excess juice.
  3. Slice each croissant in half horizontally. Heat a skillet over medium heat and add butter or olive oil. Toast each croissant half cut side down for 1-2 minutes until golden and crisp.
  4. Spread a thin layer of Dijon mustard on the bottom croissant halves. Spread a generous layer of mashed avocado over the mustard. Layer tomato slices evenly on top, then add fresh greens if using. Sprinkle flaky sea salt and black pepper.
  5. Place the top croissant halves over the fillings. Optionally, press lightly in the skillet for 30 seconds per side to meld flavors and warm the sandwich. Serve immediately.

Notes

Toast croissant halves well to prevent sogginess. Pat tomato slices dry with a paper towel before assembling. Let avocado sit with lemon juice for a minute before spreading to enhance flavor and prevent browning. Optionally press sandwich in skillet after assembly to meld flavors.
