  • 2 oz bourbon
  • 1 oz fresh lemon juice
  • 1 oz simple syrup
  • 2 oz cold water or sparkling water
  • Ice cubes as needed
  • Wood chips or rosemary sprigs for smoking (hickory or applewood recommended)
  • Optional garnish: fresh blackberries and lemon wheels

Instructions

  1. Place 1 cup of fresh blackberries into a mixing glass. Use a muddler to gently crush them until they release their juice but retain some texture (about 1-2 minutes).
  2. Pour 2 oz bourbon over the muddled berries. Stir gently and let flavors marry for about 30 seconds.
  3. Add 1 oz fresh lemon juice and 1 oz simple syrup. Stir again and adjust sweetness if desired.
  4. Strain the mixture through a fine mesh strainer into a glass filled halfway with ice cubes, pressing berries gently to extract juice without seeds.
  5. Top off with 2 oz cold water or sparkling water and stir lightly.
  6. Prepare the smoke using a smoking gun loaded with wood chips (hickory or applewood). Cover the glass with a cloche or inverted bowl and fill with smoke. Let infuse for 1-2 minutes before removing the cover. Alternatively, wave smoke from a briefly ignited rosemary sprig over the glass.
  7. Garnish with fresh blackberries and a lemon wheel on the rim. Serve immediately while smoke is visible.

Notes

Do not over-muddle blackberries to avoid bitterness. Use fresh lemon juice for brightness. Adjust simple syrup to taste. Use mild wood chips like hickory or applewood for smoking. Chill glass beforehand for best experience. For a stronger smoky flavor, swirl smoked bourbon or add smoked salt to the rim. Non-alcoholic versions can use bourbon-flavored syrup or non-alcoholic whiskey alternatives with smoked rosemary sprig.
