These boozy cherry bomb popsicles combine tart frozen cherries with bourbon and a splash of citrus for a refreshing adult treat perfect for summer parties or spontaneous gatherings.

Ingredients

  • 2 cups (300g) pitted frozen cherries
  • 1/2 cup (120ml) bourbon
  • 1/4 cup (60ml) simple syrup
  • 2 tablespoons (30ml) fresh lime juice
  • 1/4 cup (60ml) water
  • 1 tablespoon (15ml) cherry liqueur (optional)
  • Pinch of salt

Instructions

  1. In a medium bowl, combine 1/4 cup simple syrup, 1/4 cup water, 2 tablespoons fresh lime juice, and a pinch of salt. Stir until well blended.
  2. Add 2 cups frozen cherries to a blender or food processor. Pulse a few times to break them up slightly but keep some texture.
  3. Pour the syrup mixture into the cherries, then add 1/2 cup bourbon and 1 tablespoon cherry liqueur if using. Stir gently to combine.
  4. Spoon or pour the mixture into popsicle molds, leaving a small gap at the top. Tap molds gently to release air bubbles.
  5. Insert sticks, cover molds with lids or foil, and freeze for at least 6 hours or overnight.
  6. To unmold, run warm water briefly on the outside of the molds to loosen the popsicles and slide them out.

Notes

Do not add more than 1/3 of total liquid as alcohol to ensure popsicles freeze properly. For softer popsicles, add a splash of club soda or more bourbon. Let mixture chill in fridge 15-20 minutes before freezing for better flavor melding. If no molds, use small paper cups and wooden sticks.
