A refreshing and playful watermelon vodka slushie with a fizzy Pop Rocks rim, perfect for summer parties and casual get-togethers.

Ingredients

Scale
  • 4 cups (600 grams) fresh watermelon, cubed and frozen
  • 1 cup (240 ml) vodka
  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons (30 ml) simple syrup
  • 2 cups (480 ml) ice cubes
  • 1 packet (0.14 oz / 4 grams) Pop Rocks candy
  • Lime wedges for rimming the glass

Instructions

  1. Cut fresh watermelon into cubes and freeze for at least 4 hours or overnight.
  2. In a blender, combine frozen watermelon cubes, vodka, fresh lime juice, simple syrup, and ice cubes.
  3. Blend on high for 30-45 seconds until smooth and thick, scraping down the sides if needed.
  4. Rub the rim of each glass with a lime wedge to moisten.
  5. Pour Pop Rocks candy onto a small plate and gently press the rim of each glass into the candy to coat evenly.
  6. Carefully pour the slushie mixture into each rimmed glass, filling almost to the top.
  7. Serve immediately to enjoy the full fizzy effect of the Pop Rocks.

Notes

Freeze watermelon cubes completely for best texture. Rim glasses with Pop Rocks just before serving to keep the fizz. Pulse blend to avoid melting ice. Adjust simple syrup to taste depending on watermelon sweetness. For a mocktail, omit vodka and add extra lime juice and sparkling water.
