A smoky-sweet summer cocktail featuring grilled peaches, bourbon, fresh mint, and lemon juice, perfect for backyard gatherings or solo relaxation.

Ingredients

  • 1 large fresh peach (or 2 smaller ones), halved and pitted
  • 2 ounces (60 ml) bourbon
  • 68 fresh mint leaves
  • 3/4 ounce (22 ml) freshly squeezed lemon juice
  • 1/2 ounce (15 ml) simple syrup
  • Ice cubes
  • Splash of soda water (optional)
  • Lemon wheel and mint sprig for garnish

Instructions

  1. Preheat your grill or grill pan to medium-high heat, around 375ยฐF (190ยฐC).
  2. Halve and pit the peach(s). Brush lightly with oil or melted butter to prevent sticking.
  3. Grill the peach halves flesh side down for 3-4 minutes until charred lines appear and they soften slightly. Flip and grill the skin side for another 2 minutes.
  4. Remove peaches from grill and let cool for a few minutes. Cut into chunks for muddling.
  5. In a cocktail shaker, add grilled peach chunks, 6-8 fresh mint leaves, and 1/2 ounce simple syrup. Gently muddle to release juices and oils without pulverizing.
  6. Add 2 ounces bourbon, 3/4 ounce lemon juice, and plenty of ice to the shaker. Shake vigorously for about 15 seconds until well chilled.
  7. Strain the cocktail into a rocks glass filled with fresh ice. Use a fine mesh strainer if you prefer no pulp.
  8. Optional: top with a splash of soda water for fizz.
  9. Garnish with a lemon wheel and a sprig of mint (slap the mint gently before adding to release aroma).
  10. Serve immediately and enjoy.

Notes

Do not overcook peaches; they should be soft but hold shape. Adjust sweetness by varying simple syrup. Use fresh ripe peaches for best flavor. Can substitute maple syrup for simple syrup for a richer twist. For a lighter drink, reduce bourbon and top with more soda water.
