Instructions

  1. Preheat grill or grill pan to medium-high heat (about 425ยฐF).
  2. Slice fresh pineapple into 4 rings or chunks about ยฝ-inch thick.
  3. Grill pineapple slices for 2-3 minutes per side until caramelized with dark grill marks.
  4. In a cocktail shaker, muddle 3-4 chunks of grilled pineapple with fresh mint leaves gently for 20-30 seconds.
  5. Add 2 oz bourbon, ยพ oz lime juice, and ยฝ oz simple syrup to the shaker.
  6. Fill the shaker halfway with ice cubes and secure the lid.
