  • 1 ounce fresh lime juice, freshly squeezed
  • ยฝ ounce simple syrup (homemade or store-bought)
  • Ice cubes
  • Mint leaves for garnish (optional)
  • Club soda or sparkling water to top off (optional)

Instructions

  1. Peel, core, and slice the pineapple into ยฝ-inch thick rings or chunks.
  2. Preheat your grill or grill pan to medium-high heat.
  3. Place the pineapple slices on the grill and cook for about 3-4 minutes on each side until golden grill marks and a slight caramelized crust form.
  4. If making homemade simple syrup, combine equal parts sugar and water in a small saucepan over medium heat, stir until sugar dissolves, then cool.
  5. In a cocktail shaker, add 2-3 grilled pineapple pieces and muddle gently to release juices without smashing to pulp.
  6. Add 2 oz white rum, 1 oz fresh lime juice, and ยฝ oz simple syrup to the shaker.
  7. Fill the shaker with ice cubes, secure the lid, and shake vigorously for about 15 seconds until well chilled.
  8. Strain the cocktail into a chilled glass filled with fresh ice. Optionally, top with a splash of club soda.

Notes

Do not over-muddle the pineapple to avoid a pulpy drink. Adjust simple syrup to taste. Grill pineapple just before mixing for best flavor. Chilling the glass beforehand keeps the cocktail refreshing longer. For a sugar-free version, replace simple syrup with natural sweetener or omit it. Aged rum can be used for richer flavor.
