Flavorful Grilled Pineapple Rum Punch

A smoky, tropical punch featuring grilled pineapple that adds caramelized sweetness and depth, perfect for easy entertaining and large crowds.

  • Fresh pineapple, peeled, cored, and cut into rings or chunks
  • 2 cups (16 fl oz) light or gold rum
  • 3 cups (24 fl oz) pineapple juice, preferably fresh or 100% juice
  • ยฝ cup (4 fl oz) fresh lime juice (about 4 limes)
  • ยฝ cup (4 fl oz) simple syrup, homemade or store-bought
  • 2 cups (16 fl oz) chilled ginger beer
  • 6 dashes Angostura bitters (optional)
  • Fresh mint leaves, a handful for garnish
  • Ice cubes, plenty

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 400ยฐF).
  2. Peel, core, and slice pineapple into ยพ-inch thick rings or chunks.
  3. Grill pineapple slices for 3-4 minutes per side until charred and caramelized.
  4. Set grilled pineapple aside to cool, then chop into bite-sized pieces or leave slices whole for garnish.
  5. In a large pitcher or punch bowl, combine rum, pineapple juice, fresh lime juice, and simple syrup. Stir well and adjust sweetness if needed.
  6. Add grilled pineapple pieces to the punch and stir gently. Let flavors meld for at least 10 minutes.
  7. Just before serving, add chilled ginger beer and Angostura bitters. Stir lightly to keep fizz.
  8. Fill glasses with ice and pour punch over. Garnish with fresh mint leaves and a grilled pineapple slice.

Notes

Grill pineapple to caramelize sugars and add smoky flavor. Add ginger beer just before serving to keep punch fizzy. Fresh lime juice is preferred over bottled for best flavor. Adjust simple syrup to taste. For non-alcoholic version, omit rum and add extra pineapple juice or coconut water.
