A quick and easy tropical cocktail featuring fresh pineapple juice and dark rum, delivering a bright, balanced, and refreshing Mai Tai perfect for summer gatherings or casual evenings.

Ingredients

Scale
  • 1 cup fresh pineapple, peeled and chopped
  • 2 oz dark rum (e.g., Myersโ€™s or Goslingโ€™s Black Seal)
  • 1 oz orange curaรงao
  • 1 oz fresh lime juice
  • 0.5 oz orgeat syrup
  • 0.5 oz simple syrup
  • Crushed ice, enough to fill the glass
  • Garnishes: pineapple wedge, fresh mint sprig, lime wheel (optional)

Instructions

  1. Prepare the pineapple juice: Peel and chop about 1 cup of fresh pineapple. Blend until smooth and strain through a fine mesh strainer to extract juice, discarding or reserving pulp.
  2. Juice the lime: Extract 1 oz of fresh lime juice using a citrus juicer.
  3. Combine ingredients in a cocktail shaker filled halfway with crushed ice: 2 oz dark rum, 1 oz orange curaรงao, 0.5 oz orgeat syrup, 0.5 oz simple syrup, fresh pineapple juice, and lime juice.
  4. Shake vigorously for about 15 seconds until the shaker feels frosty and cold.
  5. Fill a glass with fresh crushed ice and strain the cocktail mixture into the glass.
  6. Garnish with a pineapple wedge, fresh mint sprig, and a lime wheel on the rim.

Notes

Use fresh pineapple juice for best flavor; crushed ice chills faster and dilutes less than cubed ice. Orgeat syrup is essential for signature almond sweetness but can be substituted with almond extract mixed with simple syrup if needed. Adjust simple syrup to taste for sweetness. Serve immediately for best freshness.
