  • ½ cup (75 g) fresh or frozen dragonfruit, peeled and cubed
  • ½ cup (120 ml) canned coconut cream
  • ¾ cup (180 ml) fresh or store-bought pineapple juice
  • 3 oz (90 ml) white rum (optional, omit for mocktail)
  • 1 oz (30 ml) Blue Curaçao
  • About 2 cups (480 ml) ice cubes
  • 1 tablespoon (15 ml) fresh lime juice
  • 1 tablespoon (15 ml) simple syrup or honey (optional)

Instructions

  1. Peel and cube 1 cup (165 g) mango and ½ cup (75 g) dragonfruit. If using frozen, let it thaw slightly to blend easier.
  2. In a high-speed blender, combine mango chunks, ½ cup (120 ml) coconut cream, ¾ cup (180 ml) pineapple juice, 3 oz (90 ml) white rum, 1 tablespoon (15 ml) lime juice, and optional sweetener. Add 1½ cups (360 ml) ice cubes. Blend on high until smooth and creamy but still thick enough to hold shape.
  3. Rinse the blender quickly, then blend the dragonfruit with ½ cup (120 ml) ice cubes until it forms a thick, bright pink puree.
  4. Pour the mango pina colada base into chilled glasses, leaving space at the top for the swirl.
  5. Pour ½ oz (15 ml) Blue Curaçao over the top of each glass. Using a thin straw or skewer, gently drag through the drink to create a swirling pattern of blue and pink running through the yellow mango base.
  6. Garnish with a fresh pineapple wedge or a small dragonfruit slice on the rim if desired. Serve immediately with a straw.

Notes

If blender struggles with ice, pulse in short bursts. Adjust sweetness by tasting before adding rum or sweetener. Pour Blue Curaçao slowly for best swirl effect. Use ripe mango and dragonfruit for best flavor. For non-alcoholic version, omit rum and Blue Curaçao and use blue food coloring or butterfly pea flower tea for swirl.
