  • 2 cups (480 ml) Fresh Pineapple Juice
  • 1 cup (240 ml) Freshly squeezed Lime Juice
  • 1/2 cup (120 ml) Triple Sec or Orange Liqueur
  • 1 medium Jalapeño, sliced (seeds removed for milder heat)
  • 12 tablespoons Agave Syrup (optional)
  • Ice Cubes
  • Salt for rimming glasses (coarse kosher salt or citrus-salt blend)
  • Lime wedges and thin jalapeño slices for garnish
  • Optional: Fresh mint leaves for garnish

Instructions

  1. Slice one medium jalapeño into thin rings. Remove seeds if you prefer less heat and set aside.
  2. In a large pitcher, add the jalapeño slices and gently muddle using a muddler or wooden spoon for about 15 seconds to release oils and flavor without pulverizing.
  3. Pour in 2 cups tequila blanco, 2 cups fresh pineapple juice, 1 cup freshly squeezed lime juice, and 1/2 cup triple sec. Stir to combine.
  4. Taste the mixture and stir in 1 to 2 tablespoons agave syrup if you want it sweeter. Adjust slowly and keep tasting.
  5. Add plenty of ice cubes to the pitcher and stir gently. Let it sit for 10-15 minutes to allow the jalapeño flavor to infuse without becoming overpowering.
  6. Rub a lime wedge around the rims of your serving glasses, then dip them into coarse salt to create a salted rim.
  7. Fill glasses with ice, then pour the margarita from the pitcher. Garnish with lime wedges and a slice of jalapeño.
