  • 2 oz (60 ml) Fresh Pineapple Juice (freshly juiced or blended pineapple chunks)
  • 1 oz (30 ml) Fresh Lime Juice (fresh-squeezed)
  • 0.5 oz (15 ml) Agave Syrup (adjust to taste)
  • 23 thin slices Fresh Jalapeño (seeded for milder heat)
  • 0.5 oz (15 ml) Orange Liqueur (optional, like Cointreau or Triple Sec)
  • Ice Cubes (plenty, for shaking and serving)
  • Salt (for rimming the glass, coarse sea salt or Tajín spice mix)
  • Pineapple Wedge and Jalapeño Slice (for garnish, optional)

Instructions

  1. Prepare Your Glass: Rub a lime wedge around the rim of your margarita glass, then dip the rim into coarse salt or Tajín on a small plate to coat evenly. Set aside.
  2. Muddle Jalapeño: Place 2-3 thin slices of jalapeño (remove seeds for less heat) in a cocktail shaker. Gently muddle about 4-5 times to release oils without crushing into bits.
  3. Add Liquids: Pour in 2 oz tequila blanco, 2 oz fresh pineapple juice, 1 oz fresh lime juice, 0.5 oz agave syrup, and 0.5 oz orange liqueur if using.
  4. Add Ice and Shake: Fill the shaker with about 5-6 medium ice cubes, secure the lid, and shake vigorously for about 15 seconds until well chilled and slightly diluted.
  5. Strain and Serve: Using a fine mesh strainer, pour the cocktail into the prepared glass filled with fresh ice to keep jalapeño pieces out.
  6. Garnish: Add a pineapple wedge and a thin jalapeño slice on the rim for a fun, inviting look.

Notes

Muddle jalapeño gently to avoid bitterness and overpowering heat. Use fresh lime juice for best flavor. Adjust agave syrup to balance sweetness and heat. For a frozen version, blend all ingredients with 1 cup ice until smooth. Store leftover mix (without tequila) refrigerated up to 24 hours.
