  • 2 oz (60 ml) water or club soda (optional, for a lighter, fizzier version)
  • Ice cubes (preferably large cubes)

Instructions

  1. Prepare the simple syrup by combining equal parts sugar and water in a small saucepan. Heat gently, stirring until sugar dissolves completely. Let cool before using (about 10 minutes).
  2. Juice fresh lemons until you have 1 oz (30 ml) of juice. Strain to remove seeds and pulp if desired.
  3. Hold a rosemary sprig with tongs and carefully light it with a kitchen torch or lighter. Let it smoke for about 20 seconds, then immediately place it over your glass to trap the smoke inside.
  4. In a cocktail shaker, combine 2 oz (60 ml) whiskey, 1 oz (30 ml) fresh lemon juice, and 0.75 oz (22 ml) simple syrup. Add ice and shake vigorously for about 15 seconds until well chilled.
  5. Strain the cocktail into the smoke-filled glass over fresh ice cubes. Top with 2 oz (60 ml) club soda if you want a fizzy finish.
