A smoky twist on the classic whiskey sour featuring a charred lemon garnish that adds depth and complexity to this easy-to-make cocktail.

  • 2 oz bourbon whiskey (e.g., Buffalo Trace or Makerโ€™s Mark)
  • 3/4 oz fresh lemon juice (about 22 ml)
  • 1/2 oz simple syrup (equal parts sugar and water)
  • 1 large egg white (optional)
  • 1 whole lemon slice or twist for charring
  • Ice cubes

Instructions

  1. Rinse a fresh lemon slice or a long strip of lemon peel.
  2. Using a kitchen torch or holding it carefully over a gas burner, gently char the surface until blackened in spots and fragrant (about 1-2 minutes). Set aside to cool slightly.
  3. Squeeze fresh lemon juice until you have 3/4 oz (22 ml). Strain out seeds and pulp.
  4. Pour 2 oz bourbon whiskey, 3/4 oz fresh lemon juice, 1/2 oz simple syrup, and egg white (if using) into a cocktail shaker.
  5. Seal the shaker and dry shake vigorously without ice for about 15 seconds to emulsify the egg white.
  6. Add a handful of ice cubes (4-5 medium cubes) and shake hard for 20-25 seconds until the shaker feels cold.
  7. Double strain the cocktail into a chilled rocks glass filled with fresh ice.
  8. Express the oils over the drink by gently squeezing the charred lemon twist, then place it on the rim or float it on top.

Notes

For a vegan version, replace egg white with aquafaba. Adjust simple syrup to taste if the cocktail is too sour or strong. Double strain to ensure a smooth texture. Use firm, unwaxed lemons for best charring results. If no kitchen torch is available, carefully char lemon over a gas burner or grill.
