  • 2 oz (60 ml) Tequila Blanco (100% agave)
  • ½ cup diced fresh pineapple (about 80 grams)
  • 23 thin slices fresh jalapeño (seeds optional)
  • 1 oz (30 ml) fresh lime juice
  • ½ oz (15 ml) agave syrup
  • ½ oz (15 ml) orange liqueur (Cointreau or Triple Sec)
  • Ice cubes (4 to 6 medium-sized cubes)
  • Salt or Tajín (optional, for rimming the glass)

Instructions

  1. Rub a lime wedge around the rim of your rocks glass. Dip the rim into salt or Tajín on a small plate to coat. Set aside.
  2. In a cocktail shaker, add diced fresh pineapple and jalapeño slices. Gently muddle for about 30 seconds until pineapple releases juice but is not pureed. Avoid over-muddling jalapeño.
  3. Add tequila blanco, orange liqueur, fresh lime juice, and agave syrup to the shaker.
  4. Fill the shaker with ice cubes (4 to 6 medium-sized).
  5. Secure the lid and shake vigorously for about 15 seconds to chill and combine flavors.
  6. Strain the mixture over fresh ice in the prepared rocks glass. Use a fine strainer for a smooth drink or strain roughly for texture.
  7. Garnish with a slice of jalapeño or a small pineapple wedge on the rim. Serve immediately and enjoy.

Notes

Adjust jalapeño slices and seeds to control heat level. Use fresh pineapple and lime juice for best flavor. Shake vigorously but avoid over-muddling jalapeño to prevent excessive spiciness. Chill glasses before serving for a colder drink. Can be made ahead by mixing non-ice ingredients and refrigerating up to 24 hours; add ice and shake before serving.
