  • 3/4 oz (22 ml) fresh lemon juice
  • 1/2 oz (15 ml) simple syrup
  • 2โ€“3 oz (60โ€“90 ml) champagne
  • Ice
  • Lemon twist for garnish

Instructions

  1. Make the simple syrup by combining 1/2 cup (100 g) granulated sugar and 1/2 cup (120 ml) water in a saucepan. Heat over medium, stirring until the sugar dissolves completely. Cool before using.
  2. Chill your champagne flute in the freezer for 5โ€“10 minutes.
  3. Roll the lemon on your countertop to release the juices, then cut it in half and squeeze. Youโ€™ll need about 3/4 oz (22 ml) of juice for one cocktail.
  4. In a cocktail shaker, add gin, fresh lemon juice, and simple syrup. Fill the shaker halfway with ice.
  5. Cover the shaker and shake vigorously for about 15 seconds.
  6. Using a fine mesh strainer, pour the mixture into your chilled champagne flute.
  7. Top with champagne and gently stir once or twice with a bar spoon to combine.
  8. Garnish with a thin strip of lemon peel, twisted to release its oils, and serve immediately.
