Fresh Chia Seed Lemon Water Recipe for Easy Hydrating Boost

A refreshing and hydrating drink combining fresh lemon juice and chia seeds that create a subtle gel-like texture, perfect for warm weather and quick hydration.

  • 2 tablespoons chia seeds
  • 1 large fresh lemon, juiced (about 2 tablespoons lemon juice)
  • 2 cups (480 ml) filtered water
  • 12 teaspoons honey or maple syrup (optional)
  • Ice cubes (optional)

Instructions

  1. Measure 2 tablespoons (about 30 ml) of chia seeds and add them to your mixing glass or jar.
  2. Add 2 cups (480 ml) of filtered water to the chia seeds. Stir gently but thoroughly to prevent clumps. Let this sit for about 10 minutes until the seeds swell and develop a gel-like coating.
  3. While the chia seeds soak, juice your lemon until you have around 2 tablespoons (30 ml) of fresh lemon juice. Strain if you want to avoid pulp.
  4. Once the chia seeds have thickened the water, stir in the fresh lemon juice.
  5. Taste the mixture and add sweetener if desired (1-2 teaspoons honey or maple syrup). Stir again to combine.
  6. Add ice cubes if you prefer your drink chilled. Stir lightly.
  7. Pour into your favorite glass and enjoy immediately, or refrigerate for up to 24 hours.

Notes

Stir chia seeds immediately after adding to water to prevent clumps. Soak for about 10 minutes for a pleasantly thickened texture. Adjust sweetness to taste. Store in fridge up to 24 hours and stir before drinking. Rolling lemons before juicing helps release more juice.
