  • 1 large cucumber, peeled and chopped (about 1 ยฝ cups)
  • Juice of 2 fresh limes
  • 1012 fresh mint leaves
  • ยฝ cup (120 ml) heavy cream
  • 2 cups (480 ml) ice cubes

Instructions

  1. Peel the cucumber and chop into chunks (about 1 ยฝ cups). Juice the limes and set aside. Rinse and gently pat dry the mint leaves.
  2. Add the cucumber chunks and mint leaves to a high-speed blender. Pulse a few times to start breaking them down, keeping some texture.
  3. Pour in the fresh lime juice and heavy cream. Blend until smooth and creamy but with a hint of cucumber texture.
  4. Add about 2 cups of ice cubes to the blender. Blend on high speed until the ice is crushed and the mixture resembles a smooth, icy slushie. Add more ice if a thicker texture is desired.
  5. Taste and adjust sweetness by adding a drizzle of honey or agave syrup if too tart. If too thick, add a splash of cold water or more lime juice and blend briefly.
  6. Pour the slushie into chilled glasses. Garnish with a sprig of mint or a thin cucumber slice and serve immediately.

Notes

For a lighter or dairy-free version, substitute heavy cream with coconut cream or plant-based creamer. Use crushed ice for a finer slush texture. Let mint steep in lime juice for 5 minutes before blending for a stronger herbal flavor. Avoid over-blending ice to prevent watery texture. Serve immediately for best icy creaminess.
