Fresh Cucumber Lime Refresher Recipe with Hydrating Chia Seeds

A quick and easy refreshing drink combining crisp cucumber, tangy lime, and hydrating chia seeds, perfect for hot summer days.

  • 1 medium cucumber, peeled and thinly sliced
  • 2 fresh limes, juiced (about 3 tablespoons)
  • 2 tablespoons chia seeds
  • 4 cups cold water
  • 1 tablespoon honey or agave syrup (optional)
  • A handful of fresh mint leaves (optional)

Instructions

  1. Peel and thinly slice 1 medium cucumber.
  2. Juice 2 fresh limes, removing any seeds to yield about 3 tablespoons of juice.
  3. In a large pitcher, combine cucumber slices, lime juice, 4 cups of cold water, and 2 tablespoons of chia seeds. Stir well to distribute chia seeds evenly.
  4. Add 1 tablespoon of honey or agave syrup if desired and stir until dissolved.
  5. Toss in a handful of fresh mint leaves, gently bruising them before adding.
  6. Cover the pitcher and refrigerate for at least 30 minutes to allow chia seeds to hydrate and flavors to meld.
  7. Before serving, stir the drink well. Serve over ice and garnish with lime slices or mint sprigs if desired.

Notes

Stir chia seeds into a small amount of water first and let them bloom for 5โ€“10 minutes before mixing with other ingredients to avoid clumps. Use fresh lime juice for best flavor. Adjust sweetness to taste or omit sweetener for a natural flavor. Letting the drink sit longer (even overnight) intensifies flavors. Serve chilled over ice. Store leftovers in the refrigerator for up to 2 days and stir before serving.
