A cool, crisp, and refreshing drink made with cucumber, fresh mint, lime juice, and a touch of natural sweetener. Perfect for hydration and ultimate refreshment on hot days.

Ingredients

  • 2 medium cucumbers, peeled and chopped (about 400 grams / 14 oz)
  • 1520 fresh mint leaves
  • 4 cups (1 liter) cold filtered water
  • 2 tablespoons fresh lime juice
  • 2 tablespoons natural sweetener (agave syrup or honey), adjust to taste
  • Ice cubes, to serve
  • Optional: thin cucumber slices for garnish
  • Optional: extra mint sprigs for presentation

Instructions

  1. Peel and roughly chop 2 medium cucumbers (about 400 grams / 14 oz).
  2. Place chopped cucumber and 15-20 fresh mint leaves into a blender. Add 1 cup (240 ml / 8 fl oz) cold filtered water.
  3. Blend on high speed for about 1 minute until smooth and vibrant green.
  4. Pour the blended mixture through a fine mesh sieve or cheesecloth into a large bowl or pitcher, pressing down to extract as much liquid as possible.
  5. Stir in the remaining 3 cups (720 ml / 24 fl oz) cold filtered water, 2 tablespoons fresh lime juice, and 2 tablespoons natural sweetener. Adjust sweetness to taste.
  6. Refrigerate for at least 30 minutes to chill and let flavors meld.
  7. Serve over ice cubes, garnished with thin cucumber slices and a sprig of mint.

Notes

Do not over-blend the mint leaves to avoid bitterness. Strain for a smooth texture or skip for a rustic feel. Adjust sweetness gradually. Chill well before serving. Can substitute lemon juice for lime juice. For extra cold, freeze some agua fresca in ice cube trays to use as flavored ice cubes.
