Fresh Cucumber Mint Cooler

A light, refreshing drink combining crisp cucumber, fresh mint, and a splash of lemon juice, perfect for summer spa days or chill afternoons.

Ingredients

  • 1 large cucumber or 2 medium cucumbers, peeled and roughly chopped
  • 10โ€“12 fresh mint leaves, gently washed
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 1โ€“2 tablespoons honey or agave syrup, adjusted to taste
  • 2 cups (16 fl oz) cold water or sparkling water
  • Ice cubes, plenty to chill
  • Optional: small slice of fresh ginger, grated
  • Optional: brewed and cooled green tea instead of water
  • Optional: seedless cucumber for smoothest texture

Instructions

  1. Peel and roughly chop the cucumber (about 2 cups or 8.5 oz). Remove seeds if preferred for milder taste.
  2. Place chopped cucumber in a blender or food processor and pulse until smooth (1-2 minutes). Alternatively, grate cucumber finely and squeeze juice through cheesecloth.
  3. Strain the cucumber puree through a fine mesh sieve or cheesecloth into a bowl or pitcher, pressing to extract as much liquid as possible. Discard pulp.
  4. Place 10โ€“12 fresh mint leaves in the pitcher or mixing glass and gently muddle with a wooden muddler or spoon to release oils without tearing leaves.
  5. Stir in lemon juice and honey or agave syrup until sweetener dissolves completely. Adjust sweetness to taste.
  6. Add strained cucumber juice and 2 cups cold water or sparkling water to the pitcher. Stir gently to combine.
  7. Add plenty of ice cubes to chill the cooler instantly.
  8. Pour into tall glasses over extra ice if desired. Garnish with a sprig of fresh mint and a thin cucumber slice on the rim. Serve immediately.

Notes

Use fresh, vibrant mint leaves and muddle gently to avoid bitterness. Peel cucumbers to avoid bitterness from skin. Adjust sweetness with honey or agave syrup to taste. Serve immediately over plenty of ice or chill for 30 minutes before serving. For a spa-like touch, freeze mint leaves in ice cubes. Sparkling water adds fizz; plain water makes it more soothing. Optional additions include grated ginger or green tea for flavor variation.
