Fresh Cucumber Mint Lime Cooler

A quick and easy refreshing drink perfect for hot summer days, combining crisp cucumber, zesty lime, and cooling mint with a touch of sweetness.

Ingredients

  • 1 medium cucumber, peeled and sliced (preferably English cucumber)
  • 1012 fresh mint sprigs, washed and gently bruised
  • Juice of 2 large limes (about 4 tablespoons)
  • 1 to 2 tablespoons honey or agave syrup
  • 4 cups (1 liter) cold filtered water
  • Ice cubes, as needed for serving
  • Optional: sparkling water instead of still water for fizz

Instructions

  1. Peel and slice the cucumber into thin rounds. For a silkier drink, pulse half of the cucumber in a blender or food processor until smooth, then strain through a fine mesh sieve to remove pulp (about 5 minutes).
  2. Place the mint leaves in the bottom of a pitcher. Gently muddle with a muddler or the back of a wooden spoon to release oils without overdoing it (about 1 minute).
  3. Add freshly squeezed lime juice and honey or agave syrup to the pitcher. Stir gently until the sweetener dissolves completely (about 2 minutes). Taste and adjust sweetness if needed.
  4. Add cucumber slices and strained puree (if using) to the pitcher. Pour in cold water or a mix of cold water and sparkling water. Stir to combine.
  5. Refrigerate the cooler for at least 30 minutes to let flavors meld. Alternatively, add plenty of ice cubes for immediate cooling.
  6. Serve over ice in glasses, garnished with extra mint sprigs or thin cucumber slices. Enjoy immediately for best freshness.

Notes

Gently muddle mint to avoid bitterness. Use fresh lime juice for best flavor. Blending half the cucumber and straining adds a silky texture. Chill for at least 30 minutes for best flavor melding. Add ice cubes last to avoid dilution. Store base without ice up to 24 hours refrigerated.
