  • 1 large ripe dragon fruit (pitaya), peeled and cubed
  • 1 medium banana, frozen or fresh
  • ยฝ cup (120 ml) coconut water
  • ยฝ cup diced mango (fresh or frozen)
  • 1 medium kiwi, peeled and sliced
  • 2 tablespoons toasted coconut flakes
  • ยผ cup granola
  • 1 tablespoon chia seeds
  • 1 teaspoon fresh lime juice (optional)
  • 1 teaspoon honey or agave syrup (optional)

Instructions

  1. Cut the dragon fruit in half lengthwise and scoop out the flesh with a spoon. Cube about ยฝ cup for topping and set aside.
  2. In a high-speed blender, combine the remaining dragon fruit flesh, frozen banana, and coconut water. Blend on high for about 45 seconds until smooth and creamy.
  3. Dice the mango and slice the kiwi. Toast coconut flakes in a dry skillet over medium heat for 2-3 minutes until golden and fragrant.
  4. Pour the blended pitaya base into a serving bowl. Arrange mango, kiwi, reserved dragon fruit cubes, granola, toasted coconut flakes, and chia seeds on top.
  5. Drizzle with fresh lime juice and honey or agave syrup if desired.
  6. Enjoy immediately for best texture and freshness.

Notes

Use ripe, firm dragon fruit for best flavor and texture. Freeze the banana ahead to thicken the base without watering it down. Toast coconut flakes just before serving to enhance aroma.
