  • 1 medium-sized fresh dragon fruit (pitaya), peeled and cubed
  • 1 large ripe banana, peeled and sliced
  • 1 cup (240 ml) coconut water
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1 teaspoon honey or agave syrup (optional)
  • 1/2 cup (120 ml) ice cubes (optional)

Instructions

  1. Slice the dragon fruit in half lengthwise. Using a spoon, scoop out the flesh (about 1 cup or 150 grams) and cut into cubes.
  2. Peel and slice one ripe banana into rounds.
  3. Place the dragon fruit cubes, banana slices, 1 cup (240 ml) of coconut water, and 1 tablespoon of fresh lime juice into your blender. Add 1 teaspoon of honey or agave syrup if desired.
  4. Add 1/2 cup (120 ml) of ice cubes for a colder, thicker smoothie (optional).
  5. Secure the lid and blend on high for 45-60 seconds until creamy and smooth with no chunks.
  6. Adjust consistency by adding more coconut water if too thick or more ice/frozen banana if too thin, then pulse again.
  7. Pour into chilled glasses and garnish with a lime wedge or dragon fruit seeds. Serve immediately.

Notes

Use ripe fruit for best flavor. Frozen dragon fruit can be used for a thicker, colder smoothie. Adjust sweetness with honey or agave syrup as needed. Blend in short bursts if seeds are an issue or strain for a smoother texture. Start blending on low speed then increase to high for best results.
