A crisp and refreshing non-alcoholic mojito featuring tart green apples, fresh mint, lime juice, and fizzy club soda, perfect for hot summer days.

  • 1 medium green apple (preferably Granny Smith), cored and thinly sliced
  • 1012 fresh mint leaves, washed
  • 1 large lime, juiced
  • 1 tablespoon simple syrup or honey (optional)
  • 1 cup club soda or sparkling water, chilled
  • Ice cubes (crushed or cubed) as needed
  • Optional garnish: lime slices and extra mint sprigs

Instructions

  1. Core and thinly slice the green apple; wash and pat dry the mint leaves; juice the lime.
  2. Place the mint leaves in a mixing glass with the lime juice and simple syrup or honey (if using). Gently muddle the leaves for about 20 seconds to release their oils without shredding.
  3. Add half of the apple slices and lightly muddle again with a couple of presses to mix flavors without breaking the apple too much.
  4. Fill the glass with crushed or cubed ice to the top.
  5. Slowly pour 1 cup (240 ml) of chilled club soda or sparkling water over the ice. Stir gently to combine without flattening the bubbles.
  6. Garnish with the remaining apple slices and a sprig of fresh mint. Optionally, add a lime wheel on the rim.
  7. Serve immediately for best fizz and freshness.

Notes

Be gentle when muddling mint to avoid bitterness. Use firm, tart apples like Granny Smith for best flavor and texture. Crushed ice chills faster and dilutes slowly, keeping the drink flavorful longer. Serve immediately after mixing to preserve fizz. You can prepare the mint and lime juice mixture ahead and refrigerate, adding soda and ice just before serving.
