Fresh Homemade Pink Drink Recipe with Strawberry Acai and Coconut Milk

A quick and refreshing pink drink made with strawberry acai juice and creamy coconut milk, perfect for a light summer treat.

  • 1 cup (240 ml) unsweetened strawberry acai juice
  • 1 cup (240 ml) canned full-fat coconut milk (or carton coconut milk for lighter version)
  • 1 to 2 cups ice cubes
  • 1/2 cup (120 ml) water
  • 1 to 2 tablespoons cane sugar, honey, or agave syrup (adjust to taste)
  • Freeze-dried strawberries or fresh strawberries for garnish (optional)

Instructions

  1. Chill strawberry acai juice and coconut milk in the fridge for about 30 minutes if possible.
  2. In a glass or pitcher, combine 1 cup strawberry acai juice with 1/2 cup water and stir gently.
  3. Add 1 to 2 tablespoons of your preferred sweetener and stir to combine.
  4. Fill the glass or pitcher with 1 to 2 cups of ice cubes.
  5. Slowly pour 1 cup coconut milk over the ice to create a soft pink swirl without stirring vigorously.
  6. Garnish with freeze-dried or fresh strawberries and serve immediately with a straw or spoon.

Notes

Use canned full-fat coconut milk for creaminess. Diluting the strawberry acai juice with water balances tartness and sweetness. For a layered look, pour coconut milk slowly and avoid stirring vigorously. For a blended smoothie texture, blend all ingredients with ice.
