  • 2 cups (300 grams) fresh strawberries, hulled and halved
  • 3 large lemons, juiced (about 3/4 cup or 180 ml)
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (240 ml) water for blending
  • Optional: pinch of salt
  • Optional: fresh mint leaves for serving

Instructions

  1. Wash, hull, and halve about 2 cups (300 grams) of fresh strawberries.
  2. Squeeze 3 large lemons to yield approximately 3/4 cup (180 ml) of fresh lemon juice, removing any seeds.
  3. In a blender, combine the strawberries, lemon juice, 1/2 cup (100 grams) granulated sugar, and 1 cup (240 ml) water. Blend on high for 1-2 minutes until smooth. Add a splash more water if the mixture is too thick.
  4. Optional: Pour the blended mixture through a fine mesh strainer to remove seeds and pulp, pressing with a spoon to extract as much liquid as possible.
  5. Taste the concentrate and adjust sweetness by adding more sugar if too tart or more lemon juice if too sweet.
  6. Transfer the concentrate to a clean glass jar or bottle, seal tightly, and refrigerate for at least one hour before serving to let flavors meld.

Notes

Use ripe, fragrant strawberries for best flavor. Adjust sweetness and tartness after blending to taste. Chill concentrate for at least one hour before serving. Optional straining removes seeds for smoother texture. Frozen strawberries can be used but fresh is preferred. Do not add ice during blending to avoid watering down flavor; add ice when serving instead.
