Fresh Peach Bellini Cocktail

A refreshing summer cocktail featuring fresh peach puree blended with crisp prosecco and a hint of lemon juice, perfect for casual get-togethers or relaxing afternoons.

  • 2 large fresh ripe peaches, peeled and pitted
  • 1 bottle (750 ml) chilled prosecco
  • 1 tablespoon fresh lemon juice
  • 1 to 2 tablespoons simple syrup (optional)
  • Ice cubes (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the peaches by peeling and pitting 2 large ripe peaches. To peel easily, score an X on the bottom, blanch in boiling water for 30 seconds, then plunge into ice water to slip off the skins. (10 minutes)
  2. Make the peach puree by placing peeled peaches in a blender or food processor. Add 1 tablespoon fresh lemon juice and blend until smooth but slightly textured, about 20 seconds. Add 1 tablespoon simple syrup if peaches are not very sweet and blend again. Taste and adjust sweetness as needed. (5 minutes)
  3. Chill champagne flutes in the fridge or freezer while preparing the rest. (5 minutes, can be done concurrently)
  4. Assemble the bellinis by spooning about 2 ounces (60 ml) of peach puree into each glass. Slowly pour 4 to 5 ounces (120-150 ml) chilled prosecco over the puree to preserve bubbles. Gently stir once with a spoon. (5 minutes)
  5. Garnish each glass with a fresh mint leaf or a thin peach slice on the rim and serve immediately. (2 minutes)

Notes

Use ripe peaches that are fragrant and slightly soft for best flavor. Pour prosecco slowly down the side of the glass to avoid excessive foaming. Chilling glasses helps preserve bubbles. Simple syrup is optional depending on peach sweetness. Frozen peaches can be used if fresh are unavailable, thaw and drain excess juice. For a non-alcoholic version, substitute prosecco with sparkling water or soda.
