A light, bubbly, and refreshing non-alcoholic peach bellini mocktail made with fresh peaches and sparkling cider, perfect for summer gatherings or a relaxing day.

  • 2 ripe fresh peaches, peeled and pitted
  • 1 cup (240 ml) chilled sparkling apple cider
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 teaspoon honey or simple syrup (optional)
  • Ice cubes as needed
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Peel and pit the fresh peaches, then chop into 1-inch chunks.
  2. Place peach chunks in a blender or food processor. Add fresh lemon juice and optional honey or simple syrup. Blend until smooth and creamy, about 20-30 seconds. Add a teaspoon of water if needed for smoother blending.
  3. Chill the peach puree in the fridge for 10-15 minutes if time allows.
  4. Fill each glass halfway with ice cubes to chill.
  5. Pour about 3 tablespoons (45 ml) of peach puree into each glass. Slowly top with 1/2 cup (120 ml) chilled sparkling cider, pouring gently to preserve bubbles. Stir lightly once or twice.
  6. Garnish with a sprig of fresh mint or a thin peach slice on the rim and serve immediately.

Notes

Use ripe peaches for best flavor. Chill sparkling cider well before pouring to keep fizz. Adjust sweetness with honey or syrup based on peach sweetness. Frozen peaches can be used if thawed first. Pour cider gently to preserve bubbles. Prepare peach puree up to 24 hours in advance and store refrigerated.
