A refreshing and tangy non-alcoholic mocktail featuring a peach and ginger shrub syrup, sparkling water, and a hint of lime. Perfect for summer gatherings and easy to make with simple ingredients.

  • 2 large ripe peaches, peeled and chopped
  • 2-inch piece fresh ginger root, peeled and thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup granulated sugar (can substitute honey or maple syrup)
  • 1 cup filtered water
  • Sparkling water or club soda, for topping off
  • Fresh lime juice from 1 lime (optional)
  • Ice cubes, for serving

Instructions

  1. In a medium mixing bowl, combine chopped peaches and sliced ginger. Add granulated sugar and stir gently until sugar begins to dissolve. Let sit at room temperature for about 1 hour, stirring every 15 minutes.
  2. Pour in apple cider vinegar and filtered water. Stir well, cover, and refrigerate for at least 24 hours (up to 48 hours) to allow flavors to develop.
  3. Strain the mixture through a fine mesh sieve or cheesecloth into a clean jar or bottle, pressing solids to extract liquid. Discard solids.
  4. To serve, fill a glass with ice cubes. Pour 2 to 3 tablespoons (30-45 ml) of shrub syrup over ice. Add about 1 teaspoon fresh lime juice if desired. Top with about 8 ounces (240 ml) sparkling water or club soda. Stir gently.
  5. Garnish with a thin slice of fresh peach or a small piece of candied ginger. Serve and enjoy.

Notes

If shrub syrup tastes too sharp after resting, add 1-2 teaspoons sugar and stir until dissolved. Let syrup come to room temperature before mixing for better flavor. Use ripe peaches for best flavor. The shrub syrup keeps up to 2 weeks refrigerated. Can substitute white balsamic vinegar for milder taste or sparkling ginger beer for more fizz.
