A refreshingly unique summer drink combining ripe peaches, mild green tea, and fresh lemon juice for a bright, sweet, and invigorating beverage.

Ingredients

Scale
  • 2 medium ripe peaches, sliced
  • 3 green tea bags (mild variety like Sencha recommended)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 4 cups water (2 cups hot for steeping, 2 cups cold for diluting)
  • 23 tablespoons honey or agave syrup (adjust to taste)
  • Ice cubes, as needed
  • Optional: handful of fresh mint leaves for garnish

Instructions

  1. Wash and slice 2 medium ripe peaches into thin wedges. Set aside.
  2. Bring 2 cups (16 fl oz) of water to about 175°F (80°C). Pour over 3 green tea bags in a heatproof pitcher and add the sliced peaches directly into the tea. Steep for 5-7 minutes.
  3. Remove tea bags and discard. Leave peach slices in or remove some for serving, as preferred.
  4. Stir in 1/2 cup (4 fl oz) freshly squeezed lemon juice and 2-3 tablespoons honey or agave syrup while the tea is still warm to dissolve the sweetener. Adjust sweetness to taste.
  5. Add 2 cups (16 fl oz) cold water to dilute the concentrate, then refrigerate until thoroughly chilled, at least 1 hour.
  6. Serve over ice cubes, garnished with fresh mint leaves and a peach slice if desired.

Notes

Use slightly soft, fragrant peaches for best flavor. Avoid boiling water for steeping green tea to prevent bitterness; aim for about 175°F (80°C). Fresh lemon juice is essential for brightness. Chill at least 1 hour for best flavor melding. For a sparkling version, replace cold water with sparkling water before serving. Store in refrigerator up to 2 days; remove peach slices before storing to keep them fresh longer.
