Fresh Peach Iced Tea with Mint

A refreshingly light and naturally sweet iced tea made with fresh peach slices and torn mint leaves, perfect for cooling off on hot summer days.

Ingredients

  • 4 black tea bags (Assam or Darjeeling recommended)
  • 2 large ripe peaches, sliced
  • A small handful of fresh mint leaves, torn or lightly crushed
  • 23 tablespoons honey or simple syrup (optional)
  • 6 cups (1.4 liters) cold water
  • Ice cubes for serving

Instructions

  1. Bring 4 cups (950 ml) of water to a rolling boil (about 5 minutes).
  2. Place the 4 black tea bags into a large heatproof pitcher and pour the boiling water over them. Steep for 5 to 7 minutes depending on desired strength.
  3. Remove the tea bags carefully, squeezing gently to extract flavor without bitterness. Let the tea cool for about 10 minutes.
  4. Add the sliced peaches to the pitcher.
  5. Tear or lightly crush the fresh mint leaves and stir them into the tea.
  6. Stir in 2 to 3 tablespoons of honey or simple syrup while the tea is still warm, adjusting sweetness to taste.
  7. Pour in an additional 2 cups (475 ml) of cold water to dilute the tea to preferred strength.
  8. Refrigerate the pitcher for at least 1 hour to chill and allow flavors to meld.
  9. Serve over ice cubes, garnished with extra mint sprigs or peach slices if desired.

Notes

Avoid oversteeping tea to prevent bitterness. Use ripe peaches for natural sweetness. Tear or gently crush mint leaves instead of chopping to avoid bitterness. For stronger peach flavor, lightly mash some peach slices before adding. Use filtered water and chill slowly to prevent cloudiness. Sweetener is optional and can be adjusted or substituted with maple syrup or agave.
