A quick and refreshing drink blending fresh pineapple, cucumber, and lime juice for a light, hydrating beverage perfect for hot days.

Ingredients

  • 3 cups fresh pineapple, peeled and chopped (about 1 medium pineapple)
  • 1 large English cucumber or 2 small regular cucumbers, peeled if preferred
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 4 cups cold water (1 liter), adjust based on preferred strength
  • 1 to 2 tablespoons honey, agave syrup, or simple syrup (optional)
  • Ice cubes as needed for serving

Instructions

  1. Peel and chop the pineapple into roughly 1-inch chunks. Slice the cucumber into similar-sized pieces. Peel cucumber if you prefer less pulp.
  2. Add pineapple chunks, cucumber slices, and 4 cups cold water to a high-speed blender. Blend on high until smooth and well combined.
  3. Optional: Pour the blended mixture through a fine mesh strainer or nut milk bag into a pitcher to remove pulp.
  4. Stir in the juice of 2 fresh limes and sweetener to taste, starting with 1 tablespoon and adjusting as preferred.
  5. Refrigerate the agua fresca for at least 30 minutes before serving. Serve over ice cubes for extra chill.

Notes

Use ripe pineapple for best flavor. Straining is optional depending on texture preference. Sweeten gradually to taste. Chill well before serving. Fresh lime juice is preferred over bottled. Frozen pineapple chunks can be used to chill the drink quickly.
