A refreshing and easy-to-make mocktail combining fresh pineapple, ginger, and fizzy kombucha for a vibrant, tropical, and healthy drink.

Ingredients

  • 1 cup (150 g) fresh pineapple, chopped into bite-sized chunks
  • 1 tablespoon fresh ginger root, finely grated or minced
  • 12 oz (355 ml) kombucha, plain or ginger-flavored
  • Juice of half a lime (about 1 tablespoon / 15 ml)
  • 1 teaspoon honey or maple syrup (optional)
  • Ice cubes, enough to fill glass or shaker
  • Fresh mint leaves, a few sprigs for garnish (optional)

Instructions

  1. Chop about 1 cup (150 g) of fresh pineapple into small chunks. Peel and finely grate 1 tablespoon of fresh ginger.
  2. In a mixing glass or shaker, add the pineapple chunks and grated ginger. Gently muddle together to release juices without pulverizing.
  3. Add the juice of half a lime (about 1 tablespoon / 15 ml) and 1 teaspoon of honey or maple syrup if desired. Stir gently to combine.
  4. Add enough ice cubes to fill the glass or shaker about halfway.
  5. Slowly pour 12 oz (355 ml) of kombucha into the glass or shaker to preserve fizz.
  6. Gently stir the mixture with a long spoon to blend flavors without losing carbonation.
  7. Optionally strain the mixture into a serving glass filled with fresh ice for a smoother drink.
  8. Garnish with a sprig of fresh mint and serve immediately.

Notes

Use fresh ginger for best flavor; avoid over-muddling pineapple to keep texture and clarity. Pour kombucha slowly to preserve fizz. Adjust lime juice and sweetener to taste. Garnish with fresh mint for aroma and presentation. Store leftovers in fridge up to 24 hours but expect reduced carbonation.
