Fresh Pineapple Lemonade

A refreshing homemade lemonade combining fresh pineapple juice and zesty lemons for a tropical twist, perfect for summer gatherings and easy to make in under 15 minutes.

  • 1 medium fresh pineapple, peeled and chopped (about 3 cups / 450 g pineapple chunks)
  • 45 large fresh lemons (about 1 cup / 240 ml freshly squeezed lemon juice)
  • ยฝ to ยพ cup granulated sugar (100 to 150 g), adjust to taste
  • 4 cups cold water (950 ml)
  • Ice cubes, as needed
  • Fresh mint leaves (optional, for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Peel, core, and chop the pineapple into chunks (about 3 cups / 450 g).
  2. Roll the lemons on the counter to loosen the juice, cut in half, and use a citrus juicer to extract approximately 1 cup (240 ml) of lemon juice, removing seeds.
  3. Add the pineapple chunks to a blender and pulse until smooth (1-2 minutes). Optionally strain through a fine mesh sieve for a pulp-free texture.
  4. In a large pitcher, combine the fresh pineapple juice, lemon juice, sugar (start with ยฝ cup / 100 g), and 4 cups (950 ml) cold water. Stir vigorously until sugar dissolves completely.
  5. Taste and add more sugar if desired.
  6. Add ice cubes to the pitcher or individual glasses.
  7. Garnish with lemon slices and fresh mint leaves if desired.
  8. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

If lemonade tastes too tart, add a splash more water or a teaspoon of honey. If too sweet, add extra lemon juice. Rolling lemons before juicing increases juice yield. Frozen pineapple chunks can be used if fresh is unavailable; thaw before blending. For a sparkling version, replace water with sparkling water just before serving.
