Fresh Raspberry Mint Agua Fresca with Chia Seeds

A simple, refreshing summer drink combining tart raspberries, bright mint, and nutritious chia seeds for a light and hydrating beverage.

  • 2 cups (300g) fresh raspberries
  • 1012 fresh mint leaves
  • 4 cups (1 liter) filtered or spring water
  • 2 tablespoons chia seeds
  • 23 tablespoons honey or agave nectar
  • Juice of 1 fresh lime
  • Ice cubes

Instructions

  1. In a small bowl, combine 2 tablespoons (about 30 ml) of chia seeds with 1 cup (240 ml) of water. Stir well to prevent clumps, then let sit for at least 10 minutes (or up to 30 minutes) until they form a gel-like consistency.
  2. Add 2 cups (300 g) of fresh raspberries and 10-12 fresh mint leaves to your blender. Pour in 3 cups (720 ml) of water and blend on high for about 30-45 seconds until fully pureed and smooth.
  3. If desired, strain the blended mixture through a fine mesh strainer into a pitcher, pressing gently with a spoon to extract as much liquid as possible. Discard seeds and pulp leftover.
  4. Stir in 2-3 tablespoons (30-45 ml) of honey or agave nectar, adjusting to taste, then squeeze in the juice of one fresh lime. Mix thoroughly until the sweetener dissolves.
  5. Stir the prepared chia seeds (now thick and gelled) into the raspberry-mint agua fresca. Mix well to evenly distribute the tiny seeds throughout the drink.
  6. Add ice cubes to the pitcher or glasses. Garnish with extra mint leaves or a few whole raspberries if desired. Serve immediately for the freshest taste.

Notes

Do not skip soaking the chia seeds to achieve the gel-like texture. Muddle mint leaves gently before blending to release oils without bitterness. Adjust sweetener gradually to balance tartness. Serve chilled and avoid diluting with too much melting ice. Store leftovers in a sealed container in the refrigerator for up to 2 days and stir before serving again.
