Fresh Sparkling Watermelon Mint Lemonade

A quick and easy summer drink combining sweet watermelon purรฉe, fresh lemon juice, mint, and sparkling water for a refreshing, bubbly treat perfect for hot days.

Ingredients

  • 3 cups seedless watermelon, cubed (about 450g or 1 lb)
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon granulated sugar or honey (optional)
  • 1 cup fresh lemon juice (about 45 lemons)
  • 1/2 cup simple syrup (homemade or store-bought)
  • 1 cup cold water
  • 3 cups sparkling water or club soda, chilled
  • 1015 fresh mint leaves
  • Ice cubes

Instructions

  1. Place the cubed watermelon in a blender. Add 1 tablespoon fresh lemon juice and optional sugar or honey. Blend on high until smooth, about 30-45 seconds.
  2. Optional: Strain the watermelon purรฉe through a fine mesh strainer to remove pulp and seeds for a silky texture.
  3. In a large pitcher, combine 1 cup fresh lemon juice, 1/2 cup simple syrup, and 1 cup cold water. Stir well to blend.
  4. Add the watermelon purรฉe to the lemonade base and stir to combine.
  5. Lightly bruise 10-15 fresh mint leaves using a muddler or the back of a spoon to release oils. Add the mint to the pitcher and stir gently.
  6. Add plenty of ice cubes to the pitcher. Just before serving, pour in 3 cups chilled sparkling water and stir gently to keep bubbles intact.
  7. Serve immediately in glasses filled with ice, garnished with a sprig of fresh mint and a small watermelon wedge if desired.

Notes

Add sparkling water just before serving and stir gently to preserve bubbles. Lightly muddle mint to avoid bitterness. Use fresh lemon juice for best flavor. Simple syrup can be substituted with agave or maple syrup for vegan option. Freeze watermelon cubes as ice to avoid dilution.
