A quick and easy refreshing cocktail featuring fresh peas and mint, perfect for summer gatherings or a cooling drink on sunny days. This vibrant green drink combines silky pea puree with zesty lime and a splash of spirit or soda water for a delightful sip.

  • 1 cup fresh peas, shelled (about 150 grams)
  • A handful of fresh mint leaves (about 10-12 leaves)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or agave syrup (optional)
  • 2 ounces gin or vodka (can be omitted for mocktail)
  • Soda water or sparkling water, to top up
  • Ice cubes
  • Mint sprigs for garnish

Instructions

  1. Shell about 1 cup (150 grams) of fresh peas. If using frozen peas, thaw completely and drain well.
  2. In a blender, combine peas with 1 tablespoon of water and blend until smooth. For an ultra-smooth texture, strain the puree through a fine mesh sieve into a bowl, pressing gently with a spoon (about 5 minutes).
  3. Place a handful of fresh mint leaves in a cocktail shaker and lightly muddle them to release oils without pulverizing (about 1 minute).
  4. Add 2 ounces (60 ml) gin or vodka (or omit for mocktail), 2 tablespoons (30 ml) fresh lime juice, 1 tablespoon (15 ml) honey or agave syrup, and 2 tablespoons (30 ml) pea puree to the shaker.
  5. Add ice cubes to fill the shaker halfway, cap, and shake vigorously for about 15 seconds until well chilled.
  6. Fill a serving glass with fresh ice. Strain the cocktail into the glass to keep out mint bits and pea pulp.
  7. Top off with soda water or sparkling water to taste and stir gently.
  8. Garnish with a sprig of fresh mint and optionally a few whole peas on a cocktail pick.

Notes

Use fresh peas for best flavor and color; frozen peas can be used if thawed and drained well. Muddle mint gently to avoid bitterness. Straining pea puree is optional but recommended for a silky texture. Add a pinch of salt to pea puree if flavor is bland. Freshly squeezed lime juice is preferred over bottled. For mocktail, omit alcohol and increase soda water slightly. Store pea puree in airtight container in fridge up to 2 days. Add soda water just before serving to keep fizz.
