  • 1 cup fresh strawberries, hulled and halved
  • 1 small to medium raw beetroot, peeled and chopped
  • 2 tablespoons chia seeds, soaked for 10 minutes
  • 1 cup (240 ml) unsweetened almond milk
  • 1/4 cup (60 g) Greek yogurt
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon fresh lemon juice
  • 45 ice cubes (optional)

Instructions

  1. Place 2 tablespoons of chia seeds in a small bowl and cover with 1/4 cup (60 ml) of water. Let soak for about 10 minutes until gel-like.
  2. Hull and halve 1 cup (about 150 g) of fresh strawberries. Peel and chop 1 small to medium raw beetroot into 1-inch pieces.
  3. Add soaked chia seeds (including gel), strawberries, chopped beet, 1 cup almond milk, 1/4 cup Greek yogurt, 1 teaspoon lemon juice, and 1 tablespoon honey or maple syrup (if using) into a blender.
  4. Blend starting on low speed, gradually increasing to high, for 1-2 minutes until smooth and creamy with no large beet pieces.
  5. If desired, add 4-5 ice cubes and pulse a few seconds until crushed and incorporated.
  6. Taste and adjust sweetness with additional honey or maple syrup if needed; add extra lemon juice to balance beet flavor if desired.
  7. Serve immediately in a glass and enjoy.

Notes

Soak chia seeds before blending to avoid gritty texture. Use fresh, ripe strawberries for best sweetness. Peel beets carefully to avoid bitterness. Adjust thickness by adding more almond milk or yogurt. Clean blender blades promptly to avoid beet stains. Can prep fruit and beets the night before for quick morning blending.
