A quick and easy refreshing green tea infused with ripe strawberries, honey, and lemon juice, perfect for a natural pick-me-up or a relaxing afternoon treat.

Ingredients

Scale
  • 3 green tea bags (Japanese sencha or mild green tea recommended)
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 4 cups (32 fl oz) cold water
  • Ice cubes
  • Fresh mint leaves (optional, a few sprigs)

Instructions

  1. Bring 4 cups (32 fl oz) of fresh water to a boil using a kettle or pot. Let it cool for about 2 minutes to reach approximately 175ยฐF (80ยฐC).
  2. Place 3 green tea bags in a pitcher or large jar. Pour the hot water over the tea bags and steep for 2-3 minutes. Remove the tea bags and gently squeeze to extract flavor.
  3. While the tea steeps, hull and slice 1 cup of fresh strawberries. Mash about half of them if you prefer a smoother tea.
  4. Stir the sliced and mashed strawberries into the warm tea along with 2 tablespoons of honey or preferred sweetener until dissolved.
  5. Add 1 tablespoon of fresh lemon juice and stir well.
  6. Allow the tea to cool to room temperature, then refrigerate for at least 1 hour to chill.
  7. Serve over ice cubes and garnish with fresh mint leaves if desired. Stir gently before serving.

Notes

Do not over-steep the green tea to avoid bitterness. Use ripe strawberries for natural sweetness. Let tea cool before refrigerating to prevent cloudy appearance and glass cracking. Mash some strawberries to intensify flavor. Adjust sweetener to taste. For a fizzy twist, add sparkling water before serving.
