A refreshing and easy homemade drink combining tart hibiscus tea with sweet fresh strawberries, perfect for cooling down on hot days.

  • 1/2 cup dried hibiscus flowers
  • 2 cups fresh strawberries, hulled and sliced
  • 6 cups water, divided
  • 1/4 cup sweetener (organic cane sugar, honey, or agave syrup)
  • 2 tablespoons fresh lime juice
  • Ice cubes, for serving

Instructions

  1. In a medium saucepan, bring 4 cups of water to a boil. Remove from heat, add dried hibiscus flowers, and cover. Let steep for 15 minutes until water turns deep ruby red.
  2. Strain the hibiscus tea through a fine mesh strainer into a large bowl or pitcher, pressing flowers gently to extract flavor. Discard solids.
  3. Hull and slice fresh strawberries. Add them to a blender with 1 cup of water and blend until smooth.
  4. Pour the strawberry puree into the pitcher with the hibiscus tea and stir well to combine.
  5. Stir in sweetener. Taste and adjust sweetness as needed.
  6. Add fresh lime juice and stir to combine.
  7. Pour in the remaining 1 cup of cold water and mix thoroughly.
  8. Refrigerate for at least 1 hour to chill and let flavors marry.
  9. Serve over ice cubes, garnished with strawberry slices or lime wedges if desired.

Notes

Do not overboil hibiscus to avoid bitterness. Strain thoroughly to remove seeds and petals for a smooth drink. Sweeten gradually to taste. Use fresh lime juice for best flavor. Chill before serving. For a twist, add fresh mint or a splash of sparkling water before serving. Frozen strawberries can be used to keep the drink colder longer without dilution.
