A quick and easy refreshing summer drink combining sweet strawberries, juicy watermelon, and creamy coconut milk for a smooth, icy slushie perfect for hot days.

Ingredients

  • 1 cup (150g) fresh strawberries, hulled and halved
  • 2 cups (300g) watermelon, cubed and seedless if possible
  • 1 cup (240ml) unsweetened coconut milk
  • 1 to 1ยฝ cups (150-225g) ice cubes
  • 1 to 2 tablespoons (15-30ml) honey or maple syrup (optional)
  • 1 tablespoon (15ml) fresh lime juice
  • Pinch of sea salt

Instructions

  1. Prep your fruit by hulling and halving the strawberries and cubing the watermelon. For an extra cold slushie, freeze the fruit for 15 minutes before blending.
  2. Add strawberries, watermelon, coconut milk, ice cubes, honey or maple syrup, lime juice, and sea salt to a high-speed blender.
  3. Pulse on low to break up the ice, then blend on high for 45 seconds to 1 minute until smooth and slushy.
  4. Taste and adjust sweetness or lime juice as desired, blending briefly again if you add anything.
  5. Pour into chilled glasses, garnish with a strawberry or watermelon wedge, and serve immediately with a straw.

Notes

For a thicker slushie, freeze the fruit beforehand or use crushed ice instead of cubes. Adjust ice and liquid ratio to avoid icy shards or watery texture. Use ripe fruit for best flavor. Add a splash of sparkling water for fizz or a shot of rum or vodka for an adult version. Store leftovers in an airtight container in the freezer and stir or blend briefly before serving.
