Fresh Watermelon Agua Fresca with Mint

A simple, refreshing summer drink combining the natural sweetness of watermelon with a cooling hint of fresh mint and a touch of lime.

  • 6 cups (900g) seedless, ripe watermelon chunks
  • 1012 sprigs fresh mint leaves, washed and lightly bruised
  • Juice of 2 medium limes (about 3 tablespoons or 45 ml)
  • 2 cups (475 ml) cold water
  • 12 tablespoons (1530 ml) honey, agave syrup, or simple syrup (optional)
  • Ice cubes for serving

Instructions

  1. Cut about 6 cups (900g) of seedless watermelon into chunks. Remove any seeds if your melon isnโ€™t seedless. Chill the watermelon chunks beforehand for an extra cold drink if desired.
  2. Place the watermelon chunks into a blender or food processor. Blend on high until completely smooth, about 1-2 minutes. Pulse in smaller batches if needed.
  3. Pour the blended watermelon through a fine mesh strainer into a large bowl or pitcher to remove pulp for a smoother texture (optional). Use a spoon to press the pulp and extract as much juice as possible. Skip this step if you prefer a pulpy texture.
  4. Stir in the juice of 2 medium limes (about 3 tablespoons / 45 ml). Add 1-2 tablespoons (15-30 ml) of honey, agave syrup, or simple syrup to taste. Mix well until combined. Taste first to decide if sweetener is needed.
  5. Pour in 2 cups (475 ml) of cold water to lighten the drink. Stir to combine evenly.
  6. Gently bruise 10-12 fresh mint leaves with the back of a spoon or muddler to release oils. Add them to the pitcher and stir. For a stronger mint flavor, let the pitcher sit in the fridge for 15-20 minutes before serving.
  7. Fill glasses with ice cubes and pour the fresh watermelon agua fresca over. Garnish with extra mint sprigs or a lime wedge if desired. Serve immediately for best flavor and chill.

Notes

Chill watermelon chunks before blending for a colder drink. Straining is optional depending on texture preference. Bruise mint leaves gently to avoid bitterness. Prepare just before serving or up to 1 day ahead, adding mint and ice right before serving. If drink tastes flat, add a splash of sparkling water. Adjust sweetness and lime to balance flavors.
