A quick and easy summer drink combining juicy watermelon and fresh basil with a hint of lime and honey for a refreshing, cooling beverage perfect for any occasion.

  • 4 cups fresh watermelon, cubed (seedless if possible)
  • 1012 large fresh basil leaves (Genovese basil recommended)
  • 2 tablespoons fresh lime juice (from 1 large lime)
  • 1 to 2 tablespoons honey or agave nectar
  • 1 cup cold water (240 ml)
  • Ice cubes as needed
  • Optional: pinch of sea salt

Instructions

  1. Cut about 4 cups (roughly 600 grams) of seedless watermelon into cubes, removing any seeds if present.
  2. Place the watermelon cubes in a blender and blend on high speed until smooth, about 30-45 seconds.
  3. Pour the watermelon puree through a fine mesh strainer or cheesecloth into a large bowl or pitcher, pressing the pulp to extract as much juice as possible.
  4. Add 10-12 fresh basil leaves to a small bowl or directly into the pitcher and gently muddle with a muddler or the back of a wooden spoon to release oils without shredding.
  5. To the strained watermelon juice, add the muddled basil, 2 tablespoons fresh lime juice, and 1 to 2 tablespoons honey or agave nectar. Stir well to combine. Add a pinch of sea salt if desired.
  6. Pour in 1 cup cold water to lighten the drink and stir again.
  7. Refrigerate for at least 30 minutes to let flavors mingle and chill thoroughly.
  8. Serve over ice cubes, garnished with a sprig of basil or a thin lime wheel. Enjoy immediately.

Notes

Gently muddle basil to avoid bitterness. Use ripe, juicy watermelon for best flavor. Chill for at least 30 minutes before serving to deepen flavors. Frozen watermelon cubes can be used as ice to avoid dilution. Can substitute mint for basil or add jalapeรฑo for a spicy twist. For vegan option, use agave nectar instead of honey.
