A simple, refreshing summer drink blending juicy watermelon, crisp cucumber, and lime juice for a naturally sweet and cooling beverage.

Ingredients

  • 4 cups (600 grams) seedless watermelon, cubed
  • 1 medium cucumber (about 200 grams), peeled and sliced
  • Juice of 1 lime (about 2 tablespoons or 30 ml)
  • 1 to 2 tablespoons (1530 ml) honey, agave syrup, or simple syrup (optional)
  • 2 cups (480 ml) cold water
  • 810 fresh mint leaves (optional)

Instructions

  1. Peel and cube the watermelon, peel and slice the cucumber. Remove any seeds if not using seedless watermelon.
  2. Add watermelon cubes, cucumber slices, lime juice, sweetener, and 1 cup (240 ml) cold water to a blender. Pulse until smooth but not frothy. Blend in batches if needed.
  3. Optional: Pour the blended mixture through a fine mesh strainer into a large pitcher to remove pulp and seeds, pressing solids to extract liquid.
  4. Stir in the remaining 1 cup (240 ml) cold water and add bruised mint leaves. Stir gently.
  5. Refrigerate for at least 30 minutes to chill and let flavors meld. Serve over ice.

Notes

Use ripe watermelon for best sweetness. English cucumbers preferred for fewer seeds. Adjust sweetener to taste or omit if watermelon is very sweet. Pulse blend to avoid warming and foaming. Chill thoroughly before serving. Straining is optional based on texture preference.
