A quick and easy refreshing summer drink made with fresh watermelon, mint, lime juice, and a touch of sweetness. Perfect for hot weather and gatherings.

Ingredients

Scale
  • 6 cups (900g) cubed seedless watermelon, ripe and juicy
  • 1/4 cup fresh mint leaves (about 1012 leaves), gently muddled
  • Juice of 2 medium limes (about 3 tablespoons)
  • 12 tablespoons sugar or honey, optional and adjustable
  • 2 cups (475 ml) cold water
  • Ice cubes for serving

Instructions

  1. Cube about 6 cups (900g) of seedless watermelon. No need to peel since only the flesh is used.
  2. Place 1/4 cup fresh mint leaves in a blender or bowl. Gently muddle with a muddler or wooden spoon to release aroma without bruising.
  3. Add the watermelon cubes to the blender with the muddled mint. Blend at high speed for 30 seconds to 1 minute until smooth.
  4. Optionally strain the blended mixture through a fine mesh strainer into a pitcher to remove pulp and seeds.
  5. Squeeze the juice of 2 medium limes (about 3 tablespoons) into the pitcher. Stir in 1-2 tablespoons sugar or honey, adjusting sweetness to taste.
  6. Add 2 cups (475 ml) cold water to the pitcher and stir to combine.
  7. Add ice cubes to the pitcher or pour over glasses filled with ice. Garnish with fresh mint sprigs and lime wedges if desired. Serve immediately.

Notes

Gently muddle mint leaves to avoid bitterness. Add lime juice at the end to preserve fresh zing. Straining is optional depending on texture preference. Best served fresh with ice. Store leftovers in fridge up to 24 hours, adding fresh lime juice before serving again.
