Fresh Watermelon Mint Lemonade Cooler

A quick and refreshing summer drink combining sweet watermelon, tart lemon juice, and fresh mint for a perfectly balanced cooler.

  • 4 cups seedless watermelon, cubed (about 600g or 21 oz)
  • 1/4 cup granulated sugar (50g or 3.5 tbsp), optional
  • 1 cup freshly squeezed lemon juice (240ml or 8 fl oz) – about 4-6 lemons
  • 3 cups cold water (720ml or 24 fl oz), still or sparkling
  • 1015 fresh mint leaves, bruised or lightly muddled
  • Ice cubes
  • Mint sprigs (optional, for garnish)
  • Thin lemon slices or wedges (for garnish)

Instructions

  1. Place the cubed watermelon into a blender. Add sugar if using to enhance sweetness. Blend on high for 30-45 seconds until completely smooth.
  2. Pour the blended watermelon through a fine mesh strainer into a bowl or pitcher to remove pulp and seeds. Press gently with a spoon to extract as much juice as possible, yielding about 2 cups (480ml or 16 fl oz) of watermelon juice.
  3. Roll lemons on the counter to soften, then cut and juice them until you have 1 cup (240ml or 8 fl oz) of fresh lemon juice. Remove seeds and set aside.
  4. Lightly bruise 10-15 fresh mint leaves using a muddler or spoon in a small bowl or directly in the pitcher to release oils without shredding the leaves.
  5. In a large pitcher, combine the watermelon juice, freshly squeezed lemon juice, muddled mint, and 3 cups (720ml or 24 fl oz) of cold water (still or sparkling). Stir gently to combine and dissolve any leftover sugar.
  6. Refrigerate the mixture for at least 30 minutes to let the flavors meld and the drink cool thoroughly.
  7. Fill glasses with ice cubes, pour the chilled watermelon mint lemonade cooler over, and garnish with a sprig of mint and a lemon slice. Serve immediately.
