frozen strawberry lemonade

This dreamy frozen strawberry lemonade swirls tangy, icy strawberries and fresh lemon juice with a luscious vanilla cream topping. It’s the ultimate sweet-tart-creamy summer drink, perfect for cooling off on hot days or impressing guests at your next gathering.

Ingredients

Scale
  • 2 cups frozen strawberries
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/4 cup honey or simple syrup (adjust to taste)
  • 1 cup cold water
  • 1 cup ice (use less if strawberries are very frozen)
  • 1/2 cup heavy cream (or coconut cream for dairy-free)
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract
  • Optional: lemon slices, extra strawberries, or mint for garnish

Instructions

  1. Hull strawberries if using fresh, then freeze until solid. Juice lemons to yield about 1/2 cup.
  2. In a blender, combine frozen strawberries, lemon juice, honey (or sweetener), cold water, and ice. Blend on high until thick and slushy. Add more water if too thick, or more ice if too thin.
  3. For homemade vanilla cream: Whip heavy cream with powdered sugar and vanilla extract until soft peaks form. (Or use store-bought whipped topping or coconut whip.)
  4. Pour strawberry lemonade slush into glasses, filling about 3/4 full.
  5. Top each glass with a generous spoonful of vanilla cream. Swirl gently with a straw or spoon.
  6. Garnish with lemon slices, strawberries, or mint if desired. Serve immediately with a straw.

Notes

For a dairy-free or vegan version, use coconut whipped cream or dairy-free vanilla ice cream. Adjust sweetness after blending, as strawberries and lemons vary in tartness. Chill glasses before serving for extra frostiness. If making ahead, freeze the lemonade base and re-blend before serving; add cream just before serving.
